Tim Doherty and Ian MacClure opened Syrup in Cherry Creek in April. "We'd been in the bar business and got tired of getting home at 4 a.m., so we decided to get up at 4 a.m. instead," MacClure said.
True to its pancake-and-waffles name, Syrup offers a variety of housemade syrups. Attention is paid to details. Instead of processed corned beef, Syrup roasts its own.
"There's been a culinary revolution in this country in recent years, and I think it's just naturally moved into breakfast," MacClure said.
